Some would say using optics to recreate a Vermeer doesn't make you a Vermeer and they'd be right, but that's not what this documentary is about. It doesn't try to take away Vermeer's artistry behind the technique, it just focuses on testing the technique that allowed, according to Tim's theory, Vermeer's artistry to come to life.
Just like how explaining the sfumato technique doesn't take away from Da Vinci's artworks.
Maybe the movie lacks counter-arguments that rule out Tim's theory but Tim's dedication and willingness to go the extra mile to test his idea is really what's gripping about this.
